Fried Sweet Cheese Pies -- Kalitsounia Sto Tighani
 
Ingredients
4 cups Flour
4 tablespoons Olive Oil
1 teaspoon Salt
3/4 cup Water
1 lb. Or manouri or cottage cheese Mizithra Cheese
1 lightly beaten Eggs
1/2 teaspoon Cinnamon
1 teaspoon grated Lemon rind
2 tablespoons Sugar
for frying Olive Oil
 Sugar
 Cinnamon
 
Preparation

Prepare a stiff dough with the flour, olive oil, salt and water. Leave, covered, for an hour.

Mix cheese, egg, cinnamon and sugar.

Roll out pieces of dough 1/8 inch thick, onto a floured board and cut into small rounds 3 inches in diameter. Place 1 tablespoon of the cheese mixture on each round of dough, moisten edges; fold over and seal well, pressing the edges together with a fork. Deep fry in hot oil until golden brown. Spinkle with sugar and cinnamon and serve hot.
